Class Description:
This class will build on your ability to cook in a sauté pan. It is so simple and delicious when cooked in the pan. My mother used to have a cast iron skillet that she used to make some of the best dinners using the simple “tips” we will work on in the class. We will be able to cook so many things; There is also the added benefit that some of the fastest dinners are “from the pan”.
There are a few important items to remember and work through so that you become familiar and proficient with “pan cooking”. We will learn how to use and recognize the amount of heat needed to prepare different foods. We will learn about using butters and oils; how they differ, what flavors they impart, when to use one or the other, and how much we use. Another important item to learn when cooking in a pan is “liquid choice”; it is necessary to learn whether to add water, stock, wine, juice, etc. Adding a liquid not only makes the dish more flavorful but it also adds a barrier to burning. Timing is also something we will work on in class. There are certain steps that need to be timed correctly so that the dish comes out right. Browning, searing, braising, frying, toasting, flaming, and finishing are all terms that we will go over in class and learn about them “hands on” in the class.

We will also “play” with some seasonings, herbs, garlic,
and shallots. Becoming confident with pan cooking is so important to all the
other parts of preparing meals. It is
this simple goal that we are going to reach in this class, Confidence with
the Pan!
You will want to bring pen/pencil and a notebook for class use only, an apron, appropriate clothing for cooking in the kitchen (comfortable washable wear), a knife that you will be using at home, and an open mind. I suggest you take any notes down that could help you and ask a lot of questions. These classes are for your benefit. It is important to note that those people that sign up for the first class in each cooking class series will have first priority to secure a spot in the next class in the series. It is also important for you to know that payment for the class is your way of reserving a spot in the class. The maximum class size is 16 people.
