Class Description:
So much of what makes a dish great has to do with the “Sauce” that accompanies it. There are so many ways to make sauces, and in this class I have put together a variety of quick pan sauces that can be used for so many items. All these sauces can be prepared as they are and then as you become more comfortable with sauces you can experiment and use your creativity and make up sauces for yourself. I will teach you the basics to flavoring sauces; roasting, searing, toasting, deglazing, finishing. I will also teach some of the techniques used to make the sauces beautiful, not only the texture and consistency, but with the presentation as well. How you learn whisking, reducing, and cutting the ingredients that go into the sauce are very important to the final product. I have always believed that people eat with their eyes, first, and that presentation is so important to the overall dining experience.
We will learn how to make dessert sauces, entrée sauces, and sauces for appetizers also. We will learn how to make basic stocks and veloutes. We will learn how to use liquors and liquids to enhance the flavor of sauces. Using the freshest ingredients, preparing those ingredients for the sauce, and then making the sauce are the goals of this class. To “peak” flavors and have the know-how and experience to make the most beautiful sauces can be such an asset in any kitchen.
You will want to bring pen/pencil and a notebook for class use only, an apron, appropriate clothing for cooking in the kitchen (comfortable washable wear), a knife that you will be using at home, and an open mind. I suggest you take any notes down that could help you and ask a lot of questions. These classes are for your benefit. It is important to note that those people that sign up for the first class in each cooking class series will have first priority to secure a spot in the next class in the series. It is also important for you to know that payment for the class is your way of reserving a spot in the class. The maximum class size is 16 people.
